allrecipes.com is my go to website. I used Sam’s Famous Carrot Cake and made the following modifications: 2/3 the coconut. Substituted pecans for walnuts. Deleted the pineapple and raisins.

A Kitchen Aid mixer for around $300 is required. From Amazon: baking pans, mixing bowls, a large food processor for the carrots, a small food processor for the nuts, a plastic scraper spatula are all required to make carrot cake. I didn’t make any frosting since it was sweet enough with 4.5 cups of sugar!

Why did I make so much? I had no idea how many carrots were required for 2 cups of shredded carrots so I just guessed and ended up with exactly 6 cups so I just tripled everything. 3 teaspoons = 1 tablespoon was important to know.

I couldn’t fit everything into the mixing bowl so I mixed half of everything in one batch and then another.

The finished product. I couldn’t fit all 4 pans into my oven so the round pan in the foreground I baked in the toaster oven and it came out perfect but the others just slightly overbaked. My oven runs 25-50 degrees hotter than the stated temp so I’m still experimenting to figure out the precise number.

Next time I make this I’ll use a little less sugar. 2/3 the coconut, 3/3 the pecans, and 4/3 the carrots. If you plan on frosting the cake, definitely use less sugar.
